Definitely a big +1 from us.
We don't use this functionality at present because only the user can remove their 'Interest'. Ideally we would like to be able to set a permission within roles to allocate this ability to the right person at either site, category or course level.

It would be also nice if admins could not just remove but also add people to the waiting list.

Having this function for Site Admin would be great for us as well.

We would also hugely benefit from this, at the moment there is no way to cleanse the data which makes it difficult to maintain and update the information.

My client has requested this too.
Ability for site admin to be able to remove declare interest.
Bulk action preferred.

Just adding my support for this feature - it is far too hard too remember when the current interest list was offered a place to avoid spamming them when a new sitting is offered and we cannot expect learners to remove themselves from the list when they are no longer interested.
