If you are using the Feedback activity to create the evaluation questions then when you click on the activity as an admin  there should be a tab called analysis that shows a summary of the responses - this can be exported to Excel for further analysis.

There is also a site wide report source for Feedback that provides some more info on the courses but information on the questions isn't included.
