I'm looking into reports on Totara and would like to get an overview of attempted / completed activities (within different courses), such as reading the documentation. However, I cannot figure out how to do this with the report builder and it would be very time consuming to read the activity report for each and every course.
Does anyone know of a way to use the report builder to collect data on activities within and across different courses?

Unfortunately there is not activity reporting aside from SCORM data available in the Report Builder. I recommend that you check with your Partner company to see if they have developed additional custom report sources to pull activity data.
Also, I know in the Zoola reporting analytics tool has reporting around activity time as well. Again that would be something to check with your Partner on to see if they deploy Zoola or another analytics tool to complement Totara's functionality.
