The table that this is recorded in is mdl_course_completion - the way this is linked to other tables is shown here.

We do not recommend updating completion records with a query in the database as there will be no audit trail and  tables may be linked together.

The course completion editor or uploading completion records will keep an audit trail of the changes to the completion records.
