Is there a table or otherwise which lists the columns/datasets compatible with graphs in the report builder? I'm new to Totara and it feels like I could spend years with trial and error looking for the right columns to add to generate graphs. I have run through the training course but it only included one small example.

There is a list of report sources here for Totara 12. Totara 13 added some more sources and also grouped them into areas and templated with default graphs. This is in the process of being documented.
I am not sure by the dataset not being computable with graphs - I think they all are compatible as any fields can be aggregated using counts and then graphed.
