Course Start Date When Restoring a Course from Backup?

When restoring courses from backup, I am having trouble with understanding how changing the "Course start date" affects other dates in the course. For example:

"Restrict access" dates for Topics or Activities/Resources;

"Expected completed on" dates for tracking activity completion

Event dates for Seminar activities

We repeat some courses several times throughout the year and backup restore is great for this, EXCEPT we haven't unraveled the mystery of how to correctly adjust the start date so that it automatically sets all the dates within the course as we want. Consequently, we end up having to go in to all of the dates for the things listed above and resetting them manually. 
Any help please on rhyme and reason and where in the documentation to find the answers?

Hi Rick

The course backup copies all of the course settings including dates.

Changing the start date of the course  won't change the other settings from the backup unfortunately

Well.... then maybe there is something else changing the date. The dates in the restored course are definitely different than the dates in the backup course when we change the course start date.  It is happening now.  Perhaps some other setting?

The dates changing is not a bad thing. The various dates referenced in initial posting are different with each course offering. We just would like to know what is determining what the dates change to.
