We are looking to utilize the Assignments activity so that people upload external certificates which allows you to add the reviewer email on so the system automatically emails them to say it's done.
However, looking going through the activity settings there doesn't appear to be a place to enter our email address to receive those notifications. Any idea where it could be? Thank you.

It looks like you have the setting Notify graders about settings correctly set to 'Yes'. this means that anyone who has a role that is able to grade in the assignment will be sent a notification.
The default permissions for the Trainer role has the permission to grade assignments mod/assign:grade allowed.
Depending on the user's message preferences the graders will receive an email notification sent to the email address in their profile.
