Where in the database is the link between audience and course defined. Also is there a capability/plugin that allows you to define multiple courses to an audience?

I had a look at the database schema and couldn't find the link between cohorts and course. Are you able to try and find this in the schema?
I am not sure what you mean by allowing multiple courses to an audience - an audience is allowed to have multiple courses under enrolled learning.
