We don't facilitate enabling at-rest encryption in MySQL during installation or upgrade.
That's not to say it won't work, but we don't test with it, or officially support it.

If you do test it out let us know what you find, and whether you choose to run with it or not.
I would be interested to know myself, and I am sure others will be interested also.
