I've edited a few system role types originally created by our Totara provider. However, when I go to remove some from the role it greys out their name and does not give me the option to remove.
Any advice please?

If the user has been assigned the system role using an audience then they won't be able to be unassigned from the role using the 'Assign system role' menu
Go to your audiences and check the Assign Roles tab and deselect the Role you want to remove from the audience members.
