I wondered if anyone had a solution to this request:
"We'd like to force users to update (or at least confirm) their profile details every 90 days"
Is there a config I can do for Totara 12 that would "force" users to update/confirm their Profile Details every X days? Or anything similiar?

One suggestions - create a certification with expiry of 90 days. The certification has a course in it with one activity that can be self completed to ask if profile has been completed.
Certification notification to remind users to complete their profile before it expires.
You can enrol users in the certification based on audience rules
