There are some placeholders for custom fields for users and sessions however the signup custom fields are not included.

There is an existing feature request in the suggest feature forum that you can add your support to.

The custom signup field will appear in seminar reports such as the seminar signups report so is able to be reported on but is not available to include as placeholders in notifications.
