Can custom fields be added to the record of learning page? We would like to have date of completion showing. Also, for "Other eveidenc," "evidence" is not optimal for us. We would like to update the language on that tab. Any suggestions would be welcome! Thank you.

This report can be edited by admins with report management capabilities.
The report is an embedded report Record of Learning: Evidence. This will let you add/delete columns including custom fields customise the heading names.
This will change the site for all users across the site. If you want this changed for some users then you can click Clone report button and edit the duplicate report as a User report.
It is also possible to change the word Evidence in various areas by editing words in the language pack as explained here
