We are planning to upgrade our current Version to the latest. I've found the changelogs and system requirements, but wanted to know if there were any known issues or extra steps we would need to complete the process.

It would pay to upgrade your environment to the recommended versions for the latest version
Running the upgrade command should take care of all the steps required for upgrading.
Have a look at the different versions comparison for features that have been introduced since 15 to get familiar with these.
