I want to offer my students a mechanism to record Notes whilst they complete a course and that these notes are stored in a file for them that is saved for later review. These notes should be saved in a separate file per module so that they can quickly search for modules and their notes.
is there anything that we can use for this? do you have any suggestions?

It is possible for the courses creator to create a wiki as a student wiki .
This means each student can create notes in the html editor that are separate to other students.
This allows for changes to be tracked and undone and also for the content to be exported in html format as a single zip file for future use.
Totara uses ErfurtWiki which I am not familiar with but on first look it looks pretty good with the text editor being the same as the Totara editor rather than having to create code for formatting.
