The senders email address in emails received by students who launch a course in their learning plan for the first time, is monitor@kineo.com.
Where do I change this?

I did a search on the site admin menu and couldn't find an obvious setting to change.
One possibility is the Support email address, can you check to see if this contains the email monitor@kineo.com and change if it does.
Otherwise it may be hardcoded somewhere or hidden in an activity setting.

Also check the email address of the first admin created on the site, sometimes this global admin user is used when sending mail. - usually has a userid of 2 eg
yourmoodlesite.com/user/view.php?id=2&course=1

Dani has just posted a file https://totara.community/file.php/208/moddata/forum/31/5632/Messages_and_Notifications.docx that describes all of the notifications and emails sent by Totara and how to edit these .
I think the message you are referring to is the signup and the text of the message is in the file moodle.php and it comes from the site administrator.
Does this look the same as the text you are receiving?
