I have a client who is really interested in the Publish as LTI function but is a little nervous about the "(experimental)" tagged onto the end of the description. How safe is this to install on a live clients site? Is it likely to fall out of use in later versions of Totara?

LTI isn't in the Experimental settings in Totara 12
LTI has been around since the earliest versions of Totara so is likely to stay supported. However LTI is an external standard which Totara doesn't control so there is no guarantee the standard won't change.
