deleting after event doesn’t keep a record of the attendees who were in the course or a record of that event was planned and scheduled but had to be cancelled last min for whatever the reasons.
I am wondering if there is any better solution for this. thank you!

To keep a record of users in the cancelled event you can go to the Attendees tab and remove the users from the event.
This will allow a cancellation note to be added and this will be stored under cancellations tab of the seminar.
You can create a new session with another date in the future that will have the same seminar settings as the existing one

but to keep it as a session over event?

Yes that's right - deleting the event will delete the record of who had booked the event.
