Hello - this seems like it should be obvious but I'm not seeing where I can quickly view (who is) the course creator for a course?

There is a report site logs that records who and when a course was created - you can filter by coure name and/or evfent name of Course created

Careful with the course creation date. If you use course templates, backup and restore will report the template creation date for the new course. It's best to create new and import the template.
