Is there any way to pull a list off for all the courses availible on the system? I have looked in the course and category management section, however, whilst they display the courses availible, there is no way to export this data onto Excel for example.

There is a report source courses that can be used for this. You may have to ask someone with report creation rights to do this if you aren't able to.
