For our client it would be important to be able to hide certain custom seminar fields that are listed on the sign-in sheet.

They created the custom seminar fields to add some additional information for their admins, but not for their end users. When an end user then needs to sign the sign-in sheet they will still be able to see that information.

So it would be nice if information can maybe be added, but for our use case it is important to be able to hide specific information that is presented at the top of the export page (pdf).

Tom, I totally agree with you.

In addition, our customer also wants to add their own logo, fonts and (house style) colour scheme.

The last two aren't that important, but the logo is.

Also, adding the trainer's name would be very much appreciated.

After the Seminar functionality was refactored for v16, this doesn't yet seem to have been changed. Is there any progress (or likely timeline) for being able to customise (either at a global, or ideally session/event/course/global level) the content of the sign-in sheets for export?
